Chipotle Sofritas Tacos

Ingredients

The tacos

  • 1 package extra-firm organic tofu (14 ounce)
  • 1 batch chipotle sauce
  • 2 tablespoons vegetable oil
  • 1 large red bell pepper or poblano pepper
  • 1 can black or pinto beans (15 ounce)
  • to taste optional toppings (salsa, Mexican crema, guacamole, queso fresco, cilantro, onion, lime)

The chipotle sauce

  • ¾ cup water or vegetable stock
  • 2 pieces chipotles in adobo sauce
  • 1 clove garlic
  • ¼ small white onion
  • 1 cup fire-roasted crushed tomatoes
  • 1 tablespoon red wine vinegar
  • ½ teaspoon ground cumin
  • ¼ teaspoon oregano
  • to taste Kosher salt and black pepper

Instructions

  1. Drain the tofu by wrapping it in paper towels and placing a heavy object on top for at least 15 minutes.
  2. While the tofu is draining, prepare the chipotle sauce by blending all sauce ingredients until smooth.
  3. Heat vegetable oil in a pan over medium-high heat, then add the drained tofu and diced pepper, sautéing until browned.
  4. Add the rinsed beans and chipotle sauce to the pan, stirring to combine and simmer for 5 minutes.
  5. Serve the sofritas in warmed tortillas with your choice of toppings.
