Chipotle Sofritas Tacos

The chipotle sauce

fire-roasted crushed tomatoes

Instructions
- Drain the tofu by wrapping it in paper towels and placing a heavy object on top for at least 15 minutes.
- While the tofu is draining, prepare the chipotle sauce by blending all sauce ingredients until smooth.
- Heat vegetable oil in a pan over medium-high heat, then add the drained tofu and diced pepper, sautéing until browned.
- Add the rinsed beans and chipotle sauce to the pan, stirring to combine and simmer for 5 minutes.
- Serve the sofritas in warmed tortillas with your choice of toppings.
