Instructions
- Preheat the broiler and prepare a rack in the upper third of the oven.
- In a bowl, whisk together olive oil, soy sauce, chili powder, chipotle chili powder, cumin, garlic powder, and onion powder.
- Crumble the tofu into small pieces and mix it with the spice mixture until well coated.
- Heat the remaining olive oil in a skillet over medium-high heat and add the tofu crumbles, cooking until dry.
- Add black beans, salsa, and nutritional yeast, cooking until warmed through.
- Spread the tofu mixture evenly in the skillet and broil for about 4 minutes until darkened.
- Stir the mixture and broil for an additional 4 minutes, repeating this process a total of three times.
- Serve the filling in warm tortillas with your choice of toppings.
