Tofu Tacos

Ingredients

The filling

  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon chili powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 14-ounce block extra-firm tofu
  • 1 14-ounce can black beans
  • ½ cup prepared salsa
  • 2 tablespoon nutritional yeast

For serving

  • as needed warm corn or flour tortillas
  • as needed sliced avocado
  • as needed chopped cilantro
  • as needed salsa
  • as needed cheese
  • as needed tomatoes

Instructions

  1. Preheat the broiler and prepare a rack in the upper third of the oven.
  2. In a bowl, whisk together olive oil, soy sauce, chili powder, chipotle chili powder, cumin, garlic powder, and onion powder.
  3. Crumble the tofu into small pieces and mix it with the spice mixture until well coated.
  4. Heat the remaining olive oil in a skillet over medium-high heat and add the tofu crumbles, cooking until dry.
  5. Add black beans, salsa, and nutritional yeast, cooking until warmed through.
  6. Spread the tofu mixture evenly in the skillet and broil for about 4 minutes until darkened.
  7. Stir the mixture and broil for an additional 4 minutes, repeating this process a total of three times.
  8. Serve the filling in warm tortillas with your choice of toppings.
