Ingredients

The tofu

  • 1 block (14-ounce) extra-firm tofu

The seasonings

  • 1 tablespoon canola oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chili powder
  • teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dry oregano
  • ¼ teaspoon ground coriander
  • ¼ teaspoon salt

The sauce

  • 8 ounces tomato sauce
  • ¼ cup vegetable broth

Instructions

  1. Press the drained block of tofu for at least 10 minutes to remove excess water.
  2. Grate the pressed tofu using a cheese grater into tiny pieces.
  3. Heat a large skillet over medium heat and drizzle with oil.
  4. Add the ground tofu and soy sauce to the skillet, cooking for 8 to 10 minutes until it starts to brown.
  5. Stir in the taco seasonings and sauté for 30 seconds to bloom the spices.
  6. Reduce heat to medium-low and stir in the tomato sauce and vegetable broth.
  7. Simmer for 5 to 6 minutes until the sauce is reduced and the tofu is beginning to brown.
  8. For firmer tofu, continue simmering for an additional 5 minutes or increase the heat.
