Ingredients

The filling

  • 2 Tbsp olive or avocado oil
  • ½ large onion (any color), finely diced
  • 1 large red bell pepper, finely diced
  • 1 medium jalapeño, finely diced, seeds removed
  • 4 medium cloves garlic, minced or pressed
  • 1 Tbsp chili powder
  • 1 ½ tsp smoked paprika
  • ¾ tsp sea salt
  • 2-3 Tbsp adobo sauce
  • ¼ cup water
  • 16 oz super firm high protein tofu, drained and shredded

For serving

  • optional Tortillas (for tacos or burritos), rice (for bowls) or tortilla chips (for nachos)
  • optional Lettuce (or Quick Citrusy Cabbage Slaw)
  • optional Tomatoes
  • optional Cilantro
  • optional Guacamole (or Easy Vegan Avocado Crema)
  • optional Salsa

Instructions

  1. Shred the tofu using a box grater and set aside.
  2. Heat oil in a large skillet over medium heat and add onion, cooking until soft.
  3. Add bell pepper and jalapeño, cooking until softened, then add garlic.
  4. Stir in chili powder, smoked paprika, and salt, coating the veggies.
  5. Add adobo sauce, optional chipotle pepper, and water, mixing well.
  6. Add the shredded tofu to the skillet, tossing to coat with the sauce.
  7. Spread tofu in an even layer and cook until it begins to sizzle, stirring occasionally.
  8. Taste and adjust seasoning, adding more water or adobo sauce if needed.
  9. Serve in bowls, tacos, or on nachos as desired.
