Instructions
- Shred the tofu using a box grater and set aside.
- Heat oil in a large skillet over medium heat and add onion, cooking until soft.
- Add bell pepper and jalapeño, cooking until softened, then add garlic.
- Stir in chili powder, smoked paprika, and salt, coating the veggies.
- Add adobo sauce, optional chipotle pepper, and water, mixing well.
- Add the shredded tofu to the skillet, tossing to coat with the sauce.
- Spread tofu in an even layer and cook until it begins to sizzle, stirring occasionally.
- Taste and adjust seasoning, adding more water or adobo sauce if needed.
- Serve in bowls, tacos, or on nachos as desired.
