Baked BBQ Shredded Tofu

Instructions
- Preheat the oven to 375°F.
- Grate the tofu using a box grater along the short edge to create long shreds.
- Toss the shredded tofu with oil and salt in a bowl.
- Spread the tofu in a thin layer on a parchment-paper lined half sheet pan.
- Bake for 12-15 minutes until golden and starting to crisp around the edges.
- Remove from the oven and toss the tofu with BBQ sauce, chili powder, and smoked paprika.
- Return to the oven and bake for an additional 6-8 minutes until firm and sticky.
- Serve the shredded tofu in tacos, quesadillas, or sandwiches.
