Instructions
- Heat a large skillet over medium heat and add oil, garlic, onion, and bell pepper. Cook until the onion is translucent.
- Increase heat to high and add crumbled tofu, cooking until it begins to brown.
- Stir in chili powder, cumin, and garlic powder to coat the tofu.
- Add chipotle pepper, adobo sauce, broth, and salsa, then reduce heat to low and simmer for at least 15 minutes.
- Prepare any desired toppings while the tofu simmers.
- Preheat the oven to low broil and brush corn tortillas with oil.
- Broil tortillas for 2–3 minutes on each side until crispy.
- Serve the tostadas topped with the braised tofu and desired toppings.
