Spicy Braised Tofu Tostadas

Ingredients

The tofu filling

  • 2 Tbsp grape seed oil or avocado oil
  • 5 cloves garlic
  • Tbsp minced garlic
  • ½ medium white or yellow onion
  • ½ medium green or red bell pepper
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 10 oz extra firm tofu
  • tsp chili powder
  • tsp ground cumin
  • 1 tsp garlic powder
  • 1 chipotle pepper in adobo sauce
  • 1 cup vegetable broth
  • ½ cup red salsa

The tostadas

  • 6 pieces white or yellow corn tortillas
  • 1–2 Tbsp grape seed oil or avocado oil (for brushing)

Toppings

  • to taste avocado or guacamole
  • to taste salsa of choice
  • to taste hot sauce
  • to taste red onion, diced
  • to taste cilantro, chopped

Instructions

  1. Heat a large skillet over medium heat and add oil, garlic, onion, and bell pepper. Cook until the onion is translucent.
  2. Increase heat to high and add crumbled tofu, cooking until it begins to brown.
  3. Stir in chili powder, cumin, and garlic powder to coat the tofu.
  4. Add chipotle pepper, adobo sauce, broth, and salsa, then reduce heat to low and simmer for at least 15 minutes.
  5. Prepare any desired toppings while the tofu simmers.
  6. Preheat the oven to low broil and brush corn tortillas with oil.
  7. Broil tortillas for 2–3 minutes on each side until crispy.
  8. Serve the tostadas topped with the braised tofu and desired toppings.
