Instructions
- Preheat the oven to 425°F.
- Mix the marinade ingredients in a bowl.
- Dice the sweet potatoes and coat them with half the marinade, then place them on a sheet pan.
- Slice the onion and place it next to the sweet potatoes.
- Pat the chicken dry, season it, and coat it with the remaining marinade.
- Arrange the chicken on the sheet pan with the vegetables.
- Bake for 30 minutes, checking after 20 minutes.
- Prepare the optional Green Harissa Sauce by blending its ingredients.
- Ensure the chicken is cooked through, and broil for extra crispiness if desired.
- Serve the chicken with the roasted sweet potatoes and garnish with cilantro.
