Harissa Chicken

Ingredients

The chicken and vegetables

  • 2 lbs sweet potatoes
  • 1 large red onion
  • 4 pieces chicken thighs

The marinade

  • 2 cloves garlic
  • 1 teaspoon salt
  • ¼ cup olive oil
  • teaspoons cumin
  • teaspoons smoked paprika
  • teaspoons chili powder
  • ¼ teaspoon chipotle powder
  • ½ teaspoon caraway seeds
  • 1 teaspoon apple cider vinegar

Optional sauce

  • 1 cup plain yogurt
  • 1 bunch cilantro
  • 2-3 slices jalapeno
  • ½ teaspoon kosher salt
  • 1 teaspoon coriander
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F.
  2. Mix the marinade ingredients in a bowl.
  3. Dice the sweet potatoes and coat them with half the marinade, then place them on a sheet pan.
  4. Slice the onion and place it next to the sweet potatoes.
  5. Pat the chicken dry, season it, and coat it with the remaining marinade.
  6. Arrange the chicken on the sheet pan with the vegetables.
  7. Bake for 30 minutes, checking after 20 minutes.
  8. Prepare the optional Green Harissa Sauce by blending its ingredients.
  9. Ensure the chicken is cooked through, and broil for extra crispiness if desired.
  10. Serve the chicken with the roasted sweet potatoes and garnish with cilantro.
