Easy Harissa Chicken

Ingredients

The chicken

  • 2 pieces bell peppers, chopped into wedges
  • 4 cloves garlic, minced
  • lbs boneless skinless chicken breast or thighs
  • ¾ cup chicken broth
  • 1 tbsp paprika
  • 2 tbsp harissa sauce
  • 1 tbsp coconut aminos
  • 2 tsp cumin
  • ½ tsp sea salt
  • ½ tsp ground pepper

Ideas for serving

  • to taste cauliflower rice (or white rice if not doing Whole30)
  • to taste fresh cilantro, chopped
  • to taste capers
  • to taste lemon wedges
  • to taste creamy herb sauce

Instructions

  1. Prep the bell pepper and garlic.
  2. Place all chicken ingredients in the Instant Pot or Slow Cooker.
  3. For the Instant Pot, close the valve, select 'Manual' or 'High Pressure', and cook for 15 minutes with natural release or 20 minutes with quick release.
  4. For the Slow Cooker, cook on low for 6 hours or on high for 3 hours.
  5. Once done, shred the chicken with two forks and serve with cauliflower or white rice, fresh cilantro, capers, and creamy herb sauce.
