Easy Italian Chicken Skillet

The vegetables

white onion, peeled and diced

garlic, peeled and thinly sliced

cherry or grape tomatoes, halved

roasted red peppers, drained and diced (about 1 cup)

fresh basil leaves, roughly chopped

grated Parmesan cheese
Instructions
- 1. Season the chicken breasts with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 4-5 minutes on each side until cooked through.
- 3. Transfer the chicken to a plate and set aside.
- 4. In the same skillet, sauté the onions for about 3 minutes until mostly cooked.
- 5. Add garlic and tomatoes, sautéing for an additional 4-5 minutes until the tomatoes begin to break down.
- 6. Stir in the roasted red peppers and half of the fresh basil, cooking for another minute.
- 7. Return the chicken to the skillet and sprinkle with the remaining basil.
- 8. Remove from heat and serve warm, topped with Parmesan cheese if desired.
