Easy Italian Chicken Skillet

Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts
  • to taste salt and pepper
  • 2 tablespoons olive oil

The vegetables

  • 1 small white onion, peeled and diced
  • 5 cloves garlic, peeled and thinly sliced
  • 2 cups cherry or grape tomatoes, halved
  • 1 jar roasted red peppers, drained and diced (about 1 cup)
  • ½ cup fresh basil leaves, roughly chopped

Optional topping

  • to taste grated Parmesan cheese

Instructions

  1. 1. Season the chicken breasts with salt and pepper.
  2. 2. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 4-5 minutes on each side until cooked through.
  3. 3. Transfer the chicken to a plate and set aside.
  4. 4. In the same skillet, sauté the onions for about 3 minutes until mostly cooked.
  5. 5. Add garlic and tomatoes, sautéing for an additional 4-5 minutes until the tomatoes begin to break down.
  6. 6. Stir in the roasted red peppers and half of the fresh basil, cooking for another minute.
  7. 7. Return the chicken to the skillet and sprinkle with the remaining basil.
  8. 8. Remove from heat and serve warm, topped with Parmesan cheese if desired.
