Skillet Tomato Chicken

Ingredients

The chicken

  • pounds boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil

The vegetables and flavorings

  • ½ medium red onion, diced
  • 1 tablespoon minced garlic
  • 4 cups grape tomatoes or other assorted tomatoes, halved
  • ¼ cup drained capers
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • ¼ cup chopped fresh parsley

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the chicken until browned on both sides and cooked through.
  3. Remove the chicken and keep warm.
  4. In the same skillet, reduce heat and add more olive oil, then sauté the red onion until softened.
  5. Add garlic and cook until fragrant, then add tomatoes, capers, red wine vinegar, honey, and remaining seasonings.
  6. Cook until the tomatoes soften, then return the chicken to the skillet and sprinkle with parsley before serving.
