Skillet Tomato Chicken

Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the chicken until browned on both sides and cooked through.
- Remove the chicken and keep warm.
- In the same skillet, reduce heat and add more olive oil, then sauté the red onion until softened.
- Add garlic and cook until fragrant, then add tomatoes, capers, red wine vinegar, honey, and remaining seasonings.
- Cook until the tomatoes soften, then return the chicken to the skillet and sprinkle with parsley before serving.
