Ingredients

The marinade

  • ¼ cup olive oil
  • 2 Tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 1 tsp dried basil, divided
  • ¼ tsp salt
  • tsp freshly cracked black pepper

The chicken and sauce

  • 1.3 lbs. boneless, skinless chicken breast
  • ½ cup chicken broth
  • 2 Tbsp tomato paste
  • ¼ tsp sugar

Instructions

  1. Combine olive oil, red wine vinegar, minced garlic, ½ tsp dried basil, salt, and pepper in a small bowl to make the marinade.
  2. Fillet the chicken breasts into thinner pieces and place them in a shallow dish.
  3. Pour the marinade over the chicken, ensuring all surfaces are coated, and marinate for 30 minutes.
  4. Heat a large skillet over medium heat and cook the chicken for about five minutes on each side until golden brown.
  5. Remove the chicken and add chicken broth, tomato paste, remaining ½ tsp dried basil, and sugar to the skillet.
  6. Whisk the sauce to combine and dissolve any browned bits, then let it simmer for about five minutes until slightly thickened.
  7. Return the chicken to the skillet and spoon the sauce over it before serving.
