Instructions
- Combine olive oil, red wine vinegar, minced garlic, ½ tsp dried basil, salt, and pepper in a small bowl to make the marinade.
- Fillet the chicken breasts into thinner pieces and place them in a shallow dish.
- Pour the marinade over the chicken, ensuring all surfaces are coated, and marinate for 30 minutes.
- Heat a large skillet over medium heat and cook the chicken for about five minutes on each side until golden brown.
- Remove the chicken and add chicken broth, tomato paste, remaining ½ tsp dried basil, and sugar to the skillet.
- Whisk the sauce to combine and dissolve any browned bits, then let it simmer for about five minutes until slightly thickened.
- Return the chicken to the skillet and spoon the sauce over it before serving.
