Ingredients

The Chicken

  • 4 pieces small chicken breast fillets (6 oz each)
  • ½ teaspoon salt
  • ½ teaspoon pepper

The Sauce

  • 2 tablespoons butter or olive oil
  • 1 clove garlic (minced)
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • 2 cups baby spinach (loosely packed)
  • ¼ cup sun dried tomatoes (packed in oil)

Instructions

  1. 1. Season the chicken breast fillets with salt and pepper.
  2. 2. Heat butter in a large non-stick skillet over medium heat.
  3. 3. Add the chicken and cook for 7-8 minutes, flipping halfway through until cooked through.
  4. 4. Transfer the chicken to a plate and set aside.
  5. 5. In the same skillet, add garlic and cook for 30 seconds.
  6. 6. Pour in chicken broth and let it simmer for 5-6 minutes until it reduces.
  7. 7. Stir in heavy cream and bring to a boil.
  8. 8. Mix in parmesan cheese and baby spinach until combined.
  9. 9. Return the chicken to the skillet and let everything simmer for another 5-6 minutes until the sauce thickens.
  10. 10. Remove from heat and serve immediately.
