Sun Dried Tomato Chicken

Ingredients

The chicken

  • 1 1/4 lbs thin boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt and pepper

The sauce

  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 teaspoon minced garlic
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 cup baby spinach leaves
  • 1/2 cup sun dried tomatoes, chopped
  • 1 tablespoon chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium high heat and season chicken with salt and pepper.
  2. Cook chicken for 4-5 minutes on each side until golden brown and cooked through, then remove and cover to keep warm.
  3. Melt butter in the same pan, then add garlic and cook for 30 seconds.
  4. Whisk in flour until combined with butter.
  5. Add chicken broth and heavy cream, whisk until combined, and bring to a simmer.
  6. Stir in parmesan cheese, then add spinach and sun dried tomatoes, cooking until spinach wilts.
  7. Turn off heat, return chicken to the pan, and spoon sauce over it. Top with parsley and serve.
