Sun Dried Tomato Chicken

Instructions
- Heat olive oil in a large pan over medium high heat and season chicken with salt and pepper.
- Cook chicken for 4-5 minutes on each side until golden brown and cooked through, then remove and cover to keep warm.
- Melt butter in the same pan, then add garlic and cook for 30 seconds.
- Whisk in flour until combined with butter.
- Add chicken broth and heavy cream, whisk until combined, and bring to a simmer.
- Stir in parmesan cheese, then add spinach and sun dried tomatoes, cooking until spinach wilts.
- Turn off heat, return chicken to the pan, and spoon sauce over it. Top with parsley and serve.
