Instructions
- 1. Season the chicken breasts with salt and pepper.
- 2. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 8 minutes per side until golden brown.
- 3. Remove the chicken and cover it to keep warm.
- 4. Whisk the arrowroot powder into the chicken broth in a small bowl.
- 5. Add minced garlic to the skillet and cook until fragrant.
- 6. Stir in the broth mixture, cream, sun-dried tomatoes, and half of the basil; bring to a gentle boil and simmer until thickened.
- 7. Return the chicken to the pan and cook for an additional minute until fully cooked.
- 8. Garnish with remaining basil before serving.
