Ingredients

The chicken

  • 4 8-oz Boneless skinless chicken breasts
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • 1 tbsp Olive oil

The sauce

  • ¼ cup Chicken broth, reduced sodium
  • 2 tsp Arrowroot powder
  • 2 cloves Garlic
  • ½ cup Heavy cream
  • ½ cup Sun-dried tomatoes
  • ½ cup Fresh basil

Instructions

  1. 1. Season the chicken breasts with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 8 minutes per side until golden brown.
  3. 3. Remove the chicken and cover it to keep warm.
  4. 4. Whisk the arrowroot powder into the chicken broth in a small bowl.
  5. 5. Add minced garlic to the skillet and cook until fragrant.
  6. 6. Stir in the broth mixture, cream, sun-dried tomatoes, and half of the basil; bring to a gentle boil and simmer until thickened.
  7. 7. Return the chicken to the pan and cook for an additional minute until fully cooked.
  8. 8. Garnish with remaining basil before serving.
