Ingredients

The pasta

  • 8 ounces whole wheat pasta

The sauce

  • 1 tablespoon unsalted butter
  • 1 ½ pounds boneless skinless chicken breasts
  • 7 ounces julienne-cut sun dried tomatoes
  • 3 cloves garlic
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ cup dry white wine
  • cup whipping cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cups baby spinach

Instructions

  1. Boil water in a large pot, add salt and cook the pasta until al dente, then drain.
  2. Melt butter in a skillet over medium heat, add chicken, and cook until golden brown.
  3. Add sun dried tomatoes, garlic, oregano, salt, black pepper, and cayenne pepper to the skillet and cook until fragrant.
  4. Pour in the wine and let it cook until evaporated.
  5. Remove from heat and stir in whipping cream, pasta, spinach, and Parmesan until combined and spinach wilts.
  6. Serve with additional Parmesan on top.
