Ingredients

The pasta

  • 10 ounces penne pasta

The protein

  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces

The sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons flour
  • ¼ cup chicken broth
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • ¼ cup oil packed sun dried tomatoes, drained

The greens

  • 2 cups fresh spinach leaves

Seasoning

  • to taste salt and pepper

Instructions

  1. Boil salted water and cook the pasta according to package directions.
  2. In a large pan, heat olive oil over medium-high heat and add the chicken, seasoning with salt and pepper.
  3. Cook the chicken for 4-5 minutes until browned and cooked through, stirring occasionally.
  4. Add minced garlic and cook for 30 seconds.
  5. Stir in flour and cook for another 30 seconds.
  6. Add chicken broth and bring to a simmer, then add heavy cream and cook until thickened for 2-3 minutes.
  7. Stir in parmesan cheese, sun dried tomatoes, and spinach, seasoning with salt and pepper.
  8. Drain the pasta and combine it with the chicken mixture in the pan, stirring to coat the pasta in the sauce before serving.
