Instructions
- Mix garlic powder, oregano, parsley, onion powder, salt, and black pepper in a small bowl.
- Season the chicken breasts with the spice blend on both sides.
- Heat a large skillet over medium-high heat and add olive oil and chicken breasts, cooking until they reach 165°F.
- Remove the chicken and add sweet onions to the pan, sautéing until translucent.
- Add minced garlic and sauté briefly.
- Deglaze the pan with cooking white wine, scraping up any bits.
- Stir in sun dried tomatoes, lemon juice, and coconut milk, bringing the mixture to a boil.
- Return the chicken to the sauce and let it cook for an additional 5 minutes.
- Remove from heat, top with fresh basil, and serve.
