Ingredients

The Chicken

  • 1.5 lbs. boneless skinless chicken breasts

  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil

The Sauce

  • 1 cup sliced sweet onion
  • 2 cloves garlic, minced
  • 1 cup diced sun dried tomato
  • 2 tablespoons cooking white wine
  • 2 tablespoons lemon juice
  • 14.5 oz. can of coconut milk
  • ½ cup sliced fresh basil

Instructions

  1. Mix garlic powder, oregano, parsley, onion powder, salt, and black pepper in a small bowl.
  2. Season the chicken breasts with the spice blend on both sides.
  3. Heat a large skillet over medium-high heat and add olive oil and chicken breasts, cooking until they reach 165°F.
  4. Remove the chicken and add sweet onions to the pan, sautéing until translucent.
  5. Add minced garlic and sauté briefly.
  6. Deglaze the pan with cooking white wine, scraping up any bits.
  7. Stir in sun dried tomatoes, lemon juice, and coconut milk, bringing the mixture to a boil.
  8. Return the chicken to the sauce and let it cook for an additional 5 minutes.
  9. Remove from heat, top with fresh basil, and serve.
