Ingredients

The chicken

  • 1 ½ – 1 ¾ lb boneless skinless chicken breast
  • 4 tablespoon all-purpose flour
  • 4 tablespoon parmesan cheese
  • 2 teaspoon table salt
  • ½ teaspoon black pepper

The sauce

  • 3 tablespoon olive oil
  • 2 tablespoon unsalted butter
  • 1 cup sweet onion, finely chopped
  • 1 head garlic, peeled and divided into 10-12 cloves
  • 1 ¼ cup chicken broth
  • 1 ¼ cup heavy cream
  • ½ cup parmesan cheese
  • to taste table salt
  • to taste black pepper
  • 2 tablespoon Italian parsley, for garnish

Instructions

  1. Combine flour and parmesan cheese in a shallow bowl.
  2. Split and pound chicken breasts to 4-6 ounce portions, then season with salt and pepper.
  3. Dredge the chicken in the flour mixture.
  4. Heat olive oil and butter in a skillet over medium-high heat, then cook the chicken until golden brown on both sides.
  5. Remove chicken and keep warm, then add chopped onion to the skillet and cook until softened.
  6. Smash garlic cloves and add them to the pan, cooking until fragrant.
  7. Add chicken broth, scraping the bottom of the pan, and simmer until reduced by half.
  8. Lower heat and stir in heavy cream, bringing to a gentle simmer.
  9. Add parmesan cheese and stir until melted, then return chicken to the pan.
  10. Simmer until the sauce thickens and chicken reaches an internal temperature of 165°F.
  11. Season sauce to taste and garnish with parsley before serving.
