Ingredients

The chicken

  • 20 oz chicken thighs, skin-on and deboned

The sauce

  • 2 tablespoons olive oil
  • 15-20 cloves garlic
  • ½ cup chicken broth
  • cup white wine
  • ¼ cup plain yogurt
  • 3 sprigs thyme (optional)
  • to taste salt
  • to taste ground black pepper
  • 1 pinch paprika
  • to garnish chopped parsley

Instructions

  1. 1. Season the chicken with salt and pepper.
  2. 2. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  3. 3. Pan-fry the chicken until both sides are crispy and browned, then remove and set aside.
  4. 4. Discard the chicken fat from the skillet and add the remaining olive oil.
  5. 5. Sauté the garlic until light brown.
  6. 6. Return the chicken to the skillet and add the chicken broth, white wine, and yogurt.
  7. 7. Lower the heat and simmer, adding thyme, salt, pepper, and paprika.
  8. 8. Reduce the sauce slightly, then remove from heat, garnish with parsley, and serve.
