Basic Tahini Sauce

Instructions
- If using dried chickpeas, soak them overnight in water with baking soda, then drain and pat dry.
- In a food processor, combine chickpeas, onion, baking powder, flour, parsley, dill, cilantro, cumin, coriander, cayenne, salt, and pepper. Pulse until well combined with a crumbly texture.
- Form the mixture into balls and then press into small patties, yielding about 12 falafels.
- Heat grapeseed oil in a frying pan over medium heat until hot.
- Fry the falafel patties in batches for 5-8 minutes until golden brown on both sides. Drain on a paper towel-lined plate.
- To make the tahini sauce, whisk together tahini, water, lemon juice, and a pinch of salt in a small bowl.
- Serve the falafel with tahini sauce, fresh salad greens, and chopped tomatoes.
