Ingredients

Homemade Falafel

  • 2 cups canned chickpeas
  • ¼ tsp baking soda
  • ½ small yellow onion, chopped
  • ½ tsp baking powder
  • cup all-purpose flour
  • ½ cup fresh parsley, stems removed
  • 2 tbsp fresh dill
  • ¼ cup fresh cilantro, stems removed
  • ½ tbsp cumin
  • ½ tbsp coriander
  • ¼ tsp cayenne pepper
  • 1 tsp salt
  • ¼ tsp ground pepper
  • ½ cup grapeseed oil for frying

Basic Tahini Sauce

  • ¼ cup tahini
  • 1-2 tbsp water
  • 1 whole lemon, juiced
  • 1 pinch salt

For serving

  • to taste baby tomatoes, cut in half
  • to taste mixed greens

Instructions

  1. If using dried chickpeas, soak them overnight in water with baking soda, then drain and pat dry.
  2. In a food processor, combine chickpeas, onion, baking powder, flour, parsley, dill, cilantro, cumin, coriander, cayenne, salt, and pepper. Pulse until well combined with a crumbly texture.
  3. Form the mixture into balls and then press into small patties, yielding about 12 falafels.
  4. Heat grapeseed oil in a frying pan over medium heat until hot.
  5. Fry the falafel patties in batches for 5-8 minutes until golden brown on both sides. Drain on a paper towel-lined plate.
  6. To make the tahini sauce, whisk together tahini, water, lemon juice, and a pinch of salt in a small bowl.
  7. Serve the falafel with tahini sauce, fresh salad greens, and chopped tomatoes.
