Easy Homemade Falafel

For frying

neutral cooking oil
Instructions
- Rinse and drain the chickpeas, then add them to a food processor with the red onion, parsley, cilantro, salt, cayenne, garlic, and cumin.
- Process until a chunky paste forms, scraping down the sides as needed.
- Transfer the mixture to a bowl and stir in the baking powder.
- Add flour gradually, 2 tablespoons at a time, until the mixture can hold its shape.
- Refrigerate the mixture for at least 1 hour.
- Form the mixture into small patties using a scoop.
- To cook, heat oil in a skillet until hot and shimmering.
- Fry the patties until golden brown and crispy on each side.
