Easy Homemade Falafel

Ingredients

The falafel mixture

  • 2 15 oz. cans chickpeas
  • ¼ unit red onion
  • 1 handful fresh parsley (about ¼ bunch)
  • 1 handful fresh cilantro (about ¼ bunch)
  • 4 cloves garlic
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp baking powder
  • ½ cup flour

For frying

  • ¼ cup neutral cooking oil

Instructions

  1. Rinse and drain the chickpeas, then add them to a food processor with the red onion, parsley, cilantro, salt, cayenne, garlic, and cumin.
  2. Process until a chunky paste forms, scraping down the sides as needed.
  3. Transfer the mixture to a bowl and stir in the baking powder.
  4. Add flour gradually, 2 tablespoons at a time, until the mixture can hold its shape.
  5. Refrigerate the mixture for at least 1 hour.
  6. Form the mixture into small patties using a scoop.
  7. To cook, heat oil in a skillet until hot and shimmering.
  8. Fry the patties until golden brown and crispy on each side.
