Instructions
- Soak the chickpeas in water for 24 hours.
- Drain the chickpeas and place them in a food processor with garlic, onion, cumin, coriander, cayenne pepper, parsley, cilantro, salt, pepper, baking soda, and lemon juice.
- Process until a mostly smooth paste forms, adding water if necessary.
- Form the mixture into 1 ½ inch patties.
- Heat oil in a large pan over medium-high heat.
- Cook the patties in batches for 2-3 minutes per side until golden brown.
- Remove from the pan and drain on paper towels.
- Serve immediately.
