Falafel Burgers

Instructions
- Soak the chickpeas in a large bowl of water overnight for at least 12 hours, then drain and rinse.
- Mix the salt, cumin, and turmeric in a small bowl, and roughly chop the parsley and cilantro.
- Combine the drained chickpeas, herbs, chopped carrots, onions, garlic, and mixed dry seasonings in a food processor and pulse until finely chopped.
- Transfer the mixture to a large bowl and add the beaten eggs, mixing well.
- Form the mixture into 8 balls using a ½ cup measure.
- Preheat the broiler and brush a baking sheet with olive oil. Flatten each ball into a patty and place on the baking sheet.
- Brush the tops of the patties with oil and season with salt. Broil for 3-5 minutes until lightly browned, then flip and broil for another 2-3 minutes until golden.
- Serve in pita bread with desired condiments.
