Ingredients

For soaking the chickpeas

  • ½ pound dried chickpeas

For the falafel

  • 1.5 teaspoons Kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 medium carrot, chopped
  • 1 small onion, peeled and chopped
  • 1 clove garlic
  • 2 eggs beaten
  • Olive oil for brushing
  • Big handful fresh parsley
  • Big handful fresh cilantro

For serving

  • Pita bread
  • Tahini sauce or tzatziki
  • Schug (optional)
  • Harissa
  • Chopped tomatoes (optional)
  • Chopped cucumbers (optional)
  • Soft lettuce leaves (such as Boston or Bibb)

Instructions

  1. Soak the chickpeas in a large bowl of water overnight for at least 12 hours, then drain and rinse.
  2. Mix the salt, cumin, and turmeric in a small bowl, and roughly chop the parsley and cilantro.
  3. Combine the drained chickpeas, herbs, chopped carrots, onions, garlic, and mixed dry seasonings in a food processor and pulse until finely chopped.
  4. Transfer the mixture to a large bowl and add the beaten eggs, mixing well.
  5. Form the mixture into 8 balls using a ½ cup measure.
  6. Preheat the broiler and brush a baking sheet with olive oil. Flatten each ball into a patty and place on the baking sheet.
  7. Brush the tops of the patties with oil and season with salt. Broil for 3-5 minutes until lightly browned, then flip and broil for another 2-3 minutes until golden.
  8. Serve in pita bread with desired condiments.
