Ingredients

The burger mixture

  • 1 ½ cup dried chickpeas, soaked overnight
  • 1 cup chopped red onion
  • ½ cup cilantro (or parsley if preferred)
  • ¼ cup chopped red pepper (or 1 tablespoon diced hot pepper)
  • 3 cloves garlic, chopped
  • 1 tablespoon tapioca starch
  • 2 teaspoons cumin
  • 1 ½ teaspoons sea salt

To serve

  • burger buns
  • red onion
  • lettuce
  • tomato
  • tahini sauce
  • vegan tzatziki

Instructions

  1. Combine all burger mixture ingredients in a food processor and blend until the mixture sticks together.
  2. Shape the mixture into burger patties and place them on a parchment-lined cookie sheet.
  3. Bake the patties at 350°F (175°C) for about 15 minutes on each side.
  4. Serve the burgers with your choice of toppings.
