Falafel Burgers

Ingredients

  • 3.5-4 cups cooked chickpeas
  • 2 small carrots
  • 1 small onion
  • 3 cloves garlic
  • ½ lemon juice
  • ¼ cup extra virgin olive oil
  • ½ cup tahini
  • 2 tsp ground cumin
  • 1 tsp kosher salt
  • ¾ cup stone ground kamut flour
  • 1 cup raw sunflower seeds
  • to taste black pepper
  • to taste paprika

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet.
  2. In a food processor, blend the garlic, carrots, and onion.
  3. Add the chickpeas, lemon juice, olive oil, tahini, cumin, and salt, and process until combined.
  4. Mix in the flour and stir until well combined, then fold in the sunflower seeds.
  5. Scoop ¼-⅓ cup of the mixture onto the baking sheet, flattening each scoop to about ¼ inch thick.
  6. Sprinkle with paprika and bake for 20 minutes.
  7. Gently flip the burgers and bake for an additional 5-10 minutes until golden brown.
  8. Allow to cool for at least 15 minutes before serving.
