Ingredients

The falafel patties

  • 1 cup organic chickpeas, canned – drained and dried
  • 1 tbsp olive oil
  • 1 unit shallot or ½ onion, finely chopped
  • 1 large garlic clove, chopped
  • 1 cup roughly chopped flat leaf parsley
  • ½ cup roughly chopped cilantro
  • ¼ tsp chipotle powder or cayenne pepper
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 2 tbsp toasted sesame seeds
  • ½ tsp baking powder
  • 1 ½ tsp kosher salt
  • 4 tbsp organic all purpose flour
  • 2 unit eggs, lightly beaten
  • to taste unit hamburger buns
  • to taste unit sliced tomatoes
  • to taste unit sliced cucumber
  • to taste unit tzatziki sauce

The tzatziki sauce

  • 2 cups Greek yogurt (full fat, organic)
  • 1 unit cucumber, roughly chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp dill, chopped
  • 2 cloves garlic
  • ½ tsp sea salt
  • ½ tsp pepper

Instructions

  1. Sauté shallots and garlic, then add to a food processor with chickpeas, herbs, and spices to form a coarse paste.
  2. Transfer mixture to a bowl and mix in sesame seeds, baking powder, flour, and beaten eggs until combined.
  3. Refrigerate the mixture for at least an hour to firm up.
  4. Shape the mixture into patties, pressing firmly to hold their shape.
  5. Fry the patties in hot oil until golden brown or bake in a preheated oven at 400°F for about 15 minutes, flipping halfway.
