Ingredients

The falafel patties

  • 2 cans chickpeas
  • ¼ cup sesame seeds
  • 6 cloves garlic
  • 1 medium red onion
  • 2 large carrots
  • 1 cup cilantro leaves and tender stems
  • ¾ cup whole wheat flour
  • 4 teaspoons cumin
  • 4 teaspoons coriander
  • ¼ teaspoon cayenne
  • teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil

The dill yogurt sauce

  • 2 cloves garlic
  • 2 tablespoons chopped fresh dill
  • ¼ cup lemon juice
  • 2 cups whole milk plain Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt

For serving

  • 8 pieces toasted hamburger buns
  • to taste pickles or pickled onions
  • to taste cilantro, lettuce or sliced cucumber

Instructions

  1. Preheat the oven to 375°F.
  2. Drain and rinse the chickpeas, then blot them dry.
  3. In a food processor, blend the chickpeas and sesame seeds until a paste forms.
  4. Chop the garlic, onion, and carrots, then add them to the food processor and pulse until finely chopped.
  5. Add the cilantro and pulse again until chopped, then combine with the chickpea mixture.
  6. Stir in the flour, spices, salt, and pepper, then form the mixture into 8 patties.
  7. Heat olive oil in a skillet over medium-high heat and fry the patties until golden brown on both sides.
  8. Transfer the patties to a baking sheet and bake for 15 minutes on each side.
  9. For the sauce, mix garlic, dill, lemon juice, yogurt, olive oil, and salt in a bowl.
  10. Assemble the burgers with the yogurt sauce and desired toppings.
