Falafel

The falafel mixture

dry chickpeas, soaked for at least 12 hours

or 1 whole onion if small

Instructions
- Chop onion, garlic, and parsley in a food processor.
- Add soaked and drained chickpeas, cumin, salt, and pepper, and blend until granulated.
- Transfer the mixture to a bowl and stir in chickpea flour; let it rest for 5 minutes.
- Form the mixture into 14–16 balls.
- Heat oil in a skillet and fry the falafel until golden brown on all sides.
- Drain excess oil on a paper towel.
- Serve with green leaves and cherry tomatoes.
