Crispy Falafel

Ingredients

The falafel mixture

  • 1 cup dried chickpeas
  • ½ cup red onion, roughly chopped
  • ½ cup fresh parsley, packed
  • ½ cup fresh cilantro, packed
  • 4 cloves garlic
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon

The oil

  • ¼ cup extra-virgin olive oil
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Preheat the oven to 375°F and coat a baking sheet with ¼ cup of olive oil.
  2. In a food processor, combine soaked chickpeas, onion, parsley, cilantro, garlic, salt, pepper, cumin, cinnamon, and remaining olive oil. Process until smooth.
  3. Shape the mixture into small patties, about 2 inches wide and ½ inch thick, and place them on the oiled baking sheet.
  4. Bake for 25 to 30 minutes, flipping halfway through, until golden brown on both sides.
