Crispy Falafel

The falafel mixture

Instructions
- Preheat the oven to 375°F and coat a baking sheet with ¼ cup of olive oil.
- In a food processor, combine soaked chickpeas, onion, parsley, cilantro, garlic, salt, pepper, cumin, cinnamon, and remaining olive oil. Process until smooth.
- Shape the mixture into small patties, about 2 inches wide and ½ inch thick, and place them on the oiled baking sheet.
- Bake for 25 to 30 minutes, flipping halfway through, until golden brown on both sides.
