Ingredients

The falafel mixture

  • 1 can chickpeas, rinsed and drained (14.5 oz)
  • ½ cup walnuts
  • cup fresh cilantro
  • cup fresh parsley
  • 1 medium shallot, diced
  • 2 to 3 cloves garlic, minced

The seasonings

  • ½ teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¾ teaspoon fine sea salt
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. In a food processor, combine walnuts, cumin, coriander, cilantro, and parsley, and process until broken down.
  3. Rinse and pat dry the chickpeas, then add them to the food processor along with shallot, garlic, salt, and olive oil.
  4. Process until the mixture sticks together but avoid turning it into a puree.
  5. Scoop 2 tablespoons of the mixture, roll into a ball, and flatten slightly to form a patty.
  6. Place the patties on the lined baking sheet and brush with olive oil.
  7. Bake for 20 to 25 minutes until the tops are dry and firm.
  8. Let cool for 5 minutes before serving.
