Baked Falafel
Ingredients
The falafel mixture

walnuts

fresh cilantro

fresh parsley

The seasonings

ground cumin

Instructions
- Preheat the oven to 400ºF and line a baking sheet with parchment paper.
- In a food processor, combine walnuts, cumin, coriander, cilantro, and parsley, and process until broken down.
- Rinse and pat dry the chickpeas, then add them to the food processor along with shallot, garlic, salt, and olive oil.
- Process until the mixture sticks together but avoid turning it into a puree.
- Scoop 2 tablespoons of the mixture, roll into a ball, and flatten slightly to form a patty.
- Place the patties on the lined baking sheet and brush with olive oil.
- Bake for 20 to 25 minutes until the tops are dry and firm.
- Let cool for 5 minutes before serving.
