Ingredients

The Tacos

  • 8 ounces firm tofu
  • 1 cup cooked black beans
  • ¼ cup red onion (diced)
  • 1 cup fresh cilantro (chopped)
  • 1 ripe avocado (sliced or guacamole)
  • ½ cup salsa
  • 1 medium lime (sliced)
  • ¼ cup pomegranate arils
  • 6 whole corn tortillas

Tofu Seasoning

  • ¾ tsp garlic powder
  • ½ tsp chili powder
  • 1 tsp cumin
  • tsp sea salt
  • 1 Tbsp salsa
  • 1 Tbsp water

Instructions

  1. Press the tofu to remove excess moisture.
  2. Heat black beans in a saucepan until bubbly, then simmer and set aside.
  3. Mix tofu seasoning ingredients in a bowl to create a sauce.
  4. Crumble the tofu and stir-fry in a skillet with oil until browned.
  5. Add the seasoning to the tofu and cook until fragrant.
  6. Warm the tortillas in the microwave or oven.
  7. Assemble the tacos with tofu, black beans, onion, avocado, cilantro, salsa, lime juice, and pomegranate arils.
  8. Serve immediately.
