Instructions
- Press the tofu to remove excess moisture.
- Heat black beans in a saucepan until bubbly, then simmer and set aside.
- Mix tofu seasoning ingredients in a bowl to create a sauce.
- Crumble the tofu and stir-fry in a skillet with oil until browned.
- Add the seasoning to the tofu and cook until fragrant.
- Warm the tortillas in the microwave or oven.
- Assemble the tacos with tofu, black beans, onion, avocado, cilantro, salsa, lime juice, and pomegranate arils.
- Serve immediately.
