Ingredients

Grains

  • 2 cups cooked brown rice

Chickpeas

  • 1 15-ounce can chickpeas
  • 2 Tbsp toasted or untoasted sesame oil
  • 1 Tbsp white or yellow miso paste
  • 2 tsp maple syrup
  • 1 tsp chili garlic sauce or red pepper flake

Dressing

  • 1 tsp chili garlic sauce or red pepper flake
  • 1 Tbsp maple syrup
  • 1 Tbsp coconut aminos
  • 2 Tbsp lime juice
  • 4 Tbsp rice vinegar
  • Tbsp sesame oil
  • 4 cloves garlic

For Serving

  • cups thinly sliced vegetables
  • ¼ cup finely chopped roasted salted peanuts or cashews

Instructions

  1. Prepare grains according to package instructions.
  2. Preheat oven to 425°F (218°C). Rinse and dry chickpeas thoroughly.
  3. In a bowl, combine sesame oil, miso paste, maple syrup, and chili garlic sauce or red pepper flake, then add chickpeas and toss to coat.
  4. Spread chickpeas on a parchment-lined baking sheet and bake for 20-25 minutes, stirring halfway through.
  5. In a separate bowl, whisk together dressing ingredients: chili garlic sauce, maple syrup, coconut aminos, lime juice, rice vinegar, sesame oil, and minced garlic.
  6. Taste and adjust the dressing as needed.
  7. Prepare vegetable garnishes and set aside.
  8. To serve, divide grains into bowls, top with chickpeas, vegetables, and dressing.
