Instructions
- Prepare grains according to package instructions.
- Preheat oven to 425°F (218°C). Rinse and dry chickpeas thoroughly.
- In a bowl, combine sesame oil, miso paste, maple syrup, and chili garlic sauce or red pepper flake, then add chickpeas and toss to coat.
- Spread chickpeas on a parchment-lined baking sheet and bake for 20-25 minutes, stirring halfway through.
- In a separate bowl, whisk together dressing ingredients: chili garlic sauce, maple syrup, coconut aminos, lime juice, rice vinegar, sesame oil, and minced garlic.
- Taste and adjust the dressing as needed.
- Prepare vegetable garnishes and set aside.
- To serve, divide grains into bowls, top with chickpeas, vegetables, and dressing.
