Instructions
- Preheat the oven to 375°F and prepare the sweet potatoes by scrubbing and poking them with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 55 minutes until tender.
- While the sweet potatoes are baking, heat olive oil in a pan and sauté the diced onion until tender.
- Add the ground turkey to the pan, breaking it apart and cooking until almost done.
- Mix the spices in a small bowl and add them to the turkey and onion mixture.
- If the turkey is dry, add water and simmer until the mixture thickens.
- Prepare your toppings by dicing the vegetables.
- Once the sweet potatoes are done, cut them open and fill with the turkey mixture and toppings.
