Turkey Chili Smothered Sweet Potatoes

Instructions
- Preheat the oven to 400ºF and wash the sweet potatoes, pricking their skins with a fork.
- Bake the sweet potatoes on a baking sheet for about 60 minutes until soft.
- While the potatoes bake, heat olive oil in a large pot and sauté ground turkey over medium heat.
- Add diced onion and minced garlic to the pot, cooking until the onion is soft.
- Drain the black beans and add them to the pot along with diced tomatoes, tomato paste, chili powder, oregano, cumin, and water. Stir and bring to a simmer.
- Let the chili simmer until the sweet potatoes are done, stirring occasionally, and add salt to taste.
- Once the sweet potatoes are baked, slice them open lengthwise and mash the insides slightly.
- Spoon about ¾ cup of chili over each sweet potato and top with shredded cheddar.
- Return to the oven for a few minutes to melt the cheese, then garnish with cilantro or green onions before serving.
