Turkey Chili Smothered Sweet Potatoes

Ingredients

Chili

  • 1 Tbsp olive oil
  • ½ lb. ground turkey
  • 1 each yellow onion
  • 2 cloves garlic
  • 1 15oz. can diced tomatoes
  • 3 oz. tomato paste
  • 1 15oz. can black beans
  • 1 Tbsp chili powder
  • ½ tsp dried oregano
  • ½ tsp ground cumin
  • 1 cup water
  • ½ tsp salt

Potatoes and Toppings

  • 4 small sweet potatoes
  • ½ cup shredded cheddar cheese
  • to taste none cilantro or green onions for garnish

Instructions

  1. Preheat the oven to 400ºF and wash the sweet potatoes, pricking their skins with a fork.
  2. Bake the sweet potatoes on a baking sheet for about 60 minutes until soft.
  3. While the potatoes bake, heat olive oil in a large pot and sauté ground turkey over medium heat.
  4. Add diced onion and minced garlic to the pot, cooking until the onion is soft.
  5. Drain the black beans and add them to the pot along with diced tomatoes, tomato paste, chili powder, oregano, cumin, and water. Stir and bring to a simmer.
  6. Let the chili simmer until the sweet potatoes are done, stirring occasionally, and add salt to taste.
  7. Once the sweet potatoes are baked, slice them open lengthwise and mash the insides slightly.
  8. Spoon about ¾ cup of chili over each sweet potato and top with shredded cheddar.
  9. Return to the oven for a few minutes to melt the cheese, then garnish with cilantro or green onions before serving.
