Instructions
- Prepare the mole sauce by sautéing garlic and onion in olive oil until fragrant.
- Add spices to the pot and cook for another 1-2 minutes.
- Remove from heat, add broth, and blend until smooth.
- Return the mixture to the pot and add almond butter, chocolate, cocoa powder, and salt. Simmer for 15-20 minutes.
- In a separate pot, heat oil and cook ground turkey until browned, then set aside.
- Sauté onion and garlic in the same pot until fragrant.
- Add bell peppers, spices, and sweet potato; cook until sweet potatoes begin to soften.
- Return turkey to the pot, add fire-roasted tomatoes and mole sauce, and simmer for 20 minutes.
- Serve in bowls and top with optional toppings.
