Instructions
- Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
- Heat olive oil in a large stock pot or Dutch oven over medium-high heat until shimmering.
- Add the onions, bell pepper, and chili seasoning; cook until the vegetables have softened.
- Stir in the garlic and cook until fragrant.
- Add the sweet potatoes, black beans, tomato purée, diced tomatoes with their juice, water, and bay leaf.
- Bring to a low boil, cover, and cook until the sweet potatoes are tender.
- Remove the lid and continue to simmer until slightly thickened.
- Remove the bay leaf and season with salt and pepper to taste.
- Serve with diced avocado, minced cilantro, and sliced scallions.
