Sweet Potato Chili

Ingredients

Chili Seasoning

  • 4 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1-2 teaspoons chipotle chili powder
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Chili Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 carrot, peeled and chopped
  • 1 celery rib, chopped
  • 8 cloves garlic, minced
  • 2 pounds sweet potatoes, peeled and cubed
  • 2 cans (15.5 ounce) black beans, drained and rinsed
  • 1 can (28 ounce) tomato purée
  • 2 cans (10 ounce) fire-roasted diced tomatoes with green chiles, undrained
  • 2 cups water or vegetable broth
  • 1 leaf bay leaf

Toppings

  • 1 avocado, diced
  • 1 fresh cilantro, minced
  • 1 scallions, thinly sliced

Instructions

  1. Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
  2. Heat olive oil in a large stock pot or Dutch oven over medium-high heat until shimmering.
  3. Add the onions, bell pepper, and chili seasoning; cook until the vegetables have softened.
  4. Stir in the garlic and cook until fragrant.
  5. Add the sweet potatoes, black beans, tomato purée, diced tomatoes with their juice, water, and bay leaf.
  6. Bring to a low boil, cover, and cook until the sweet potatoes are tender.
  7. Remove the lid and continue to simmer until slightly thickened.
  8. Remove the bay leaf and season with salt and pepper to taste.
  9. Serve with diced avocado, minced cilantro, and sliced scallions.
