  • 1 15-ounce can black beans (with salt, slightly drained)
  • 2 cups vegetable stock
  • 2 cups water

Optional Spices

  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp chipotle powder
  • 1-2 tsp hot sauce

For Serving (optional)

  • to taste fresh cilantro
  • to taste chopped red onion
  • to taste guacamole or avocado
  • to taste lime juice

Instructions

  1. In a large pot over medium heat, sauté the diced onion in oil until translucent.
  2. Add the chopped sweet potatoes and any desired spices, cooking for a few minutes.
  3. Stir in the salsa, vegetable stock, and water, bringing the mixture to a boil.
  4. Lower the heat and simmer, adding the black beans, for at least 20-30 minutes until the sweet potatoes are tender.
  5. For best flavor, let the chili rest for a few hours or overnight before serving.
  6. Serve with optional toppings like cilantro, onion, avocado, and lime juice.
