Instructions
- Heat olive oil in a Dutch oven or stockpot over medium heat.
- Add chopped onion, bell peppers, and sweet potato with a sprinkle of salt and pepper; cook until onions are translucent.
- Reduce heat to medium-low and add garlic and spices; stir in tomatoes, beans, and broth.
- Bring to a gentle simmer, cover, and cook until sweet potatoes are tender, about 45 minutes to 1 hour.
- Mash the chili for a thicker consistency if desired, season with salt and pepper, and serve with garnishes.
