Healthy Vegetarian Sweet Potato Chili

Ingredients

The base

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 medium carrot, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium sweet potato, chopped
  • 1 jalapeño seeds and membranes removed, diced

The spices

  • 2 ½ tbsp chili powder
  • 2 tsp cumin
  • 1 ½ tsp cocoa powder
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp oregano
  • 1 tsp fine sea salt
  • to taste freshly ground black pepper

The liquids and beans

  • 2 14oz cans diced tomatoes, with juices
  • ¼ cup tomato paste
  • 2 14oz cans kidney or black beans, drained and rinsed
  • 1 cup vegetable broth or water

For garnish

  • to taste shredded cheddar cheese
  • to taste cornbread
  • to taste tortilla chips
  • to taste avocado

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion with a pinch of salt and pepper until softened.
  2. Add garlic, carrot, sweet potato, pepper, and jalapeño, and cook for 5 minutes.
  3. Stir in chili powder, cocoa, cumin, smoked paprika, oregano, salt, and pepper, and cook for another minute.
  4. Add diced tomatoes, tomato paste, beans, and broth. Stir and bring to a boil, then reduce to medium low.
  5. Simmer uncovered for about 50 minutes until sweet potatoes are tender. Adjust seasoning to taste and serve with toppings.
