Healthy Vegetarian Sweet Potato Chili

Instructions
- Heat olive oil in a large pot over medium heat and sauté onion with a pinch of salt and pepper until softened.
- Add garlic, carrot, sweet potato, pepper, and jalapeño, and cook for 5 minutes.
- Stir in chili powder, cocoa, cumin, smoked paprika, oregano, salt, and pepper, and cook for another minute.
- Add diced tomatoes, tomato paste, beans, and broth. Stir and bring to a boil, then reduce to medium low.
- Simmer uncovered for about 50 minutes until sweet potatoes are tender. Adjust seasoning to taste and serve with toppings.
