Ingredients

The base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium bell peppers, chopped (any color)
  • 4 cups chopped sweet potatoes
  • 4 cloves garlic, chopped

The spices

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons curry powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

The liquids

  • 2 15-ounce cans fire roasted diced tomatoes
  • 2 15-ounce cans black beans, drained and rinsed
  • 4 cups low sodium vegetable broth

Optional toppings

  • to taste shredded cheese
  • to taste chopped avocado
  • to taste diced onion
  • to taste sliced scallions
  • to taste fresh cilantro
  • to taste sour cream

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onions, peppers, and sweet potatoes with a pinch of salt, and sauté until onions are translucent, about 5 minutes.
  3. Stir in garlic, chili powder, cumin, curry powder, and season with salt and black pepper.
  4. Add canned tomatoes, black beans, and vegetable broth, stirring to combine.
  5. Bring to a boil, then reduce to a simmer and cook for about 30 minutes, stirring occasionally, until the chili thickens and sweet potatoes are tender.
  6. Serve hot with desired toppings.
