Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onions, peppers, and sweet potatoes with a pinch of salt, and sauté until onions are translucent, about 5 minutes.
- Stir in garlic, chili powder, cumin, curry powder, and season with salt and black pepper.
- Add canned tomatoes, black beans, and vegetable broth, stirring to combine.
- Bring to a boil, then reduce to a simmer and cook for about 30 minutes, stirring occasionally, until the chili thickens and sweet potatoes are tender.
