Instructions
- Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
- Heat olive oil in a Dutch oven or large skillet over medium heat. Add onions, bell pepper, and chili seasoning, cooking until softened.
- Add minced garlic and cook until fragrant, then add ground turkey and cook until no longer pink.
- Stir in kidney beans, diced tomatoes, tomato purée, and bay leaf. Bring to a simmer, cover, and cook for 30 minutes.
- Remove the lid and simmer for an additional 30 minutes. Remove the bay leaf and season with salt and pepper.
- Serve with your choice of toppings.
