Ingredients

Chili Seasoning

  • 4 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1-2 teaspoons chipotle chili powder
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Chili Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 8 cloves garlic, minced
  • 2 pounds ground turkey
  • 2 cans (15.5 ounce) kidney beans, drained and rinsed
  • 2 cans (10 ounce) fire-roasted diced tomatoes with green chiles
  • 1 can (28 ounce) tomato purée
  • 1 leaf bay leaf

Toppings

  • to taste shredded cheese
  • to taste sour cream
  • to taste scallions, thinly sliced
  • to taste avocados, diced

Instructions

  1. Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
  2. Heat olive oil in a Dutch oven or large skillet over medium heat. Add onions, bell pepper, and chili seasoning, cooking until softened.
  3. Add minced garlic and cook until fragrant, then add ground turkey and cook until no longer pink.
  4. Stir in kidney beans, diced tomatoes, tomato purée, and bay leaf. Bring to a simmer, cover, and cook for 30 minutes.
  5. Remove the lid and simmer for an additional 30 minutes. Remove the bay leaf and season with salt and pepper.
  6. Serve with your choice of toppings.
