Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add diced onions, zucchini, and minced garlic, and sauté until softened.
- Add ground turkey and cook until browned, breaking it up as it cooks.
- Stir in diced tomatoes, tomato paste, drained beans, chili powder, cumin, cayenne, salt, and cilantro.
- Reduce heat and simmer uncovered for about an hour to thicken.
