Ingredients

The base

  • 2 tablespoons olive oil
  • 2 cups diced onions
  • 1 medium zucchini
  • 3 cloves garlic
  • 2 pounds 99% lean ground turkey breast

The liquids

  • 2 cans (28 oz) diced tomatoes
  • 1 can (14 oz) Italian stewed whole tomatoes
  • 1 can (6 oz) tomato paste

The beans

  • 2 cans (15 oz) cannellini beans

The spices

  • 5 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 3 tablespoons chopped cilantro

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add diced onions, zucchini, and minced garlic, and sauté until softened.
  3. Add ground turkey and cook until browned, breaking it up as it cooks.
  4. Stir in diced tomatoes, tomato paste, drained beans, chili powder, cumin, cayenne, salt, and cilantro.
  5. Reduce heat and simmer uncovered for about an hour to thicken.
