Ingredients

The batter

  • ½ cup plain Greek yogurt
  • 3 units eggs
  • 1 unit Juice of lemon
  • 2 tsp lemon zest
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 3 cups almond flour
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

The mix-ins

  • 1 cup blueberries, fresh or frozen

Instructions

  1. Preheat the oven to 350°F.
  2. Blend the first six ingredients together for about 30 seconds.
  3. Add the remaining ingredients, except for the blueberries, and blend for about 1 minute.
  4. Fold in the blueberries and divide the batter between 12 prepared muffin cups.
  5. Bake for 25 to 30 minutes or until a toothpick comes out clean.
  6. Transfer muffins to a wire rack to cool before enjoying.
