Instructions
- Preheat the oven to 350ºF and prepare a muffin pan with liners and cooking spray.
- In a medium bowl, combine all dry ingredients and set aside.
- In a large bowl, whisk the eggs and then add the wet ingredients (except coconut oil) and mix well.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Mix in the melted coconut oil.
- Fill each muffin cup generously, almost to the top.
- Bake for 23-25 minutes or until a toothpick comes out clean.
- Allow the muffins to cool for at least 10 minutes before serving.
