Healthy Blueberry Muffins

Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground cinnamon (optional)
  • cup melted coconut oil or extra-virgin olive oil
  • ½ cup honey or maple syrup
  • 2 units eggs, preferably at room temperature
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 cup blueberries, fresh or frozen (6 ounces)
  • 1 tablespoon turbinado sugar (for sprinkling on top)

Instructions

  1. Preheat the oven to 400°F and grease the muffin tin if necessary.
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the oil and honey or maple syrup, then add the eggs, yogurt, and vanilla, and mix well.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Toss the blueberries with a teaspoon of flour and gently fold them into the batter.
  6. Divide the batter into the muffin cups and sprinkle with turbinado sugar.
  7. Bake for 16 to 19 minutes until golden and a toothpick comes out clean.
  8. Cool the muffins on a rack and store leftovers appropriately.
