Ingredients

The batter

  • cups white whole wheat flour
  • ¾ cup old-fashioned rolled oats
  • ½ cup lightly packed light brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 1 cup nonfat milk
  • ¼ cup unsalted butter
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

The blueberries

  • 1 cup blueberries

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin.
  2. In a large bowl, mix the flour, oats, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the milk, melted butter, eggs, and vanilla together.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. Toss the blueberries with a tablespoon of flour and fold them into the batter.
  6. Divide the batter into the muffin cups and bake for 18 to 20 minutes until golden.
  7. Let the muffins cool in the pan for 10 minutes before transferring to a cooling rack.
