Ingredients

  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • cups oatmeal
  • ½ cup granulated sugar
  • ¼ teaspoon kosher salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • 1 cup blueberries
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat the oven to 400°F and spray a muffin tin with cooking spray.
  2. In a large bowl, combine whole wheat flour, all purpose flour, oatmeal, sugar, salt, and baking powder.
  3. In a separate bowl, whisk together the milk, egg, oil, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups and sprinkle with coarse sugar if desired.
  7. Bake for approximately 20 minutes until lightly browned and a toothpick comes out clean.
