Ingredients

  • 1 cup whole wheat flour
  • ¾ cup white whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • cup olive oil
  • ½ cup maple syrup
  • 2 large eggs
  • 1 cup plain yogurt or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 180C/350F and grease a 12-count muffin tin.
  2. In a large bowl, mix the whole wheat flour, white flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the olive oil, maple syrup, and eggs, then stir in the yogurt and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined, then fold in the blueberries.
  5. Distribute the batter into the muffin tin and bake for 20-22 minutes until a toothpick comes out clean.
  6. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
