Instructions
- Preheat the oven to 180C/350F and grease a 12-count muffin tin.
- In a large bowl, mix the whole wheat flour, white flour, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the olive oil, maple syrup, and eggs, then stir in the yogurt and vanilla extract.
- Combine the wet and dry ingredients, mixing until just combined, then fold in the blueberries.
- Distribute the batter into the muffin tin and bake for 20-22 minutes until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
