Ingredients

The dry ingredients

  • 1 cup whole wheat flour
  • ½ cup almond flour
  • ½ cup unbleached all-purpose flour
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

The wet ingredients

  • cup buttermilk
  • ½ cup real maple syrup
  • 2 large eggs
  • cup olive oil
  • 2 tsp vanilla extract

The fruit

  • cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together the dry ingredients.
  3. In another bowl, whisk the wet ingredients until well blended.
  4. Combine the wet and dry mixtures, folding in the blueberries gently.
  5. Fill a greased muffin pan with the batter nearly to the top.
  6. Bake for 16 to 20 minutes until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
