Fried Okra

Ingredients

The batter

  • 2 eggs eggs
  • ¼ cup milk or buttermilk
  • 1 pound fresh okra, stems and tips removed, cut into ½-inch slices
  • cup fine yellow cornmeal
  • cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For frying

  • as needed cup vegetable oil

Instructions

  1. Prepare a baking sheet with a wire baking rack.
  2. In a medium bowl, whisk together eggs and milk, then add okra and let sit for 10 minutes.
  3. In a zip-top bag, combine cornmeal, flour, baking powder, and salt, and shake well.
  4. Drain okra using a mesh strainer.
  5. In small batches, add okra to the cornmeal mixture, shake gently to coat, and place on the baking sheet.
  6. In a large skillet or Dutch oven, heat oil to 375 degrees Fahrenheit.
  7. Add okra in batches and cook until brown on all sides, about 2 to 3 minutes.
  8. Remove from oil and place on a paper towel-lined plate.
  9. Season to taste with salt and serve.
