Fried Okra

Instructions
- Prepare a baking sheet with a wire baking rack.
- In a medium bowl, whisk together eggs and milk, then add okra and let sit for 10 minutes.
- In a zip-top bag, combine cornmeal, flour, baking powder, and salt, and shake well.
- Drain okra using a mesh strainer.
- In small batches, add okra to the cornmeal mixture, shake gently to coat, and place on the baking sheet.
- In a large skillet or Dutch oven, heat oil to 375 degrees Fahrenheit.
- Add okra in batches and cook until brown on all sides, about 2 to 3 minutes.
- Remove from oil and place on a paper towel-lined plate.
- Season to taste with salt and serve.
